How to Make Perfect Chicken Broast: A Step-by-Step Guide


Chicken broast is a popular fried chicken dish that combines the juiciness of broiled chicken with the crispy coating of fried chicken. This recipe for a full chicken broast delivers tender, flavorful meat inside a crunchy, golden crust. It’s perfect for family dinners or when you’re craving a delicious, homemade treat.


Ingredients


For the Chicken:


1 whole chicken (about 3-4 pounds), cut into 8 pieces


1 cup buttermilk


2 tablespoons lemon juice


2 teaspoons garlic paste


2 teaspoons ginger paste


1 tablespoon hot sauce (optional)


Salt and pepper to taste



For the Coating:


2 cups all-purpose flour


1/4 cup cornstarch


2 teaspoons paprika


1 teaspoon cayenne pepper (optional)


1 teaspoon garlic powder


1 teaspoon onion powder


Salt and pepper to taste



For Frying:


Vegetable oil, for deep frying

Method


1. Marinate the Chicken:

Start by marinating the chicken to infuse it with flavor and ensure the meat is tender. In a large bowl, combine buttermilk, lemon juice, garlic paste, ginger paste, hot sauce (if using), salt, and pepper. Add the chicken pieces, making sure they are fully coated in the marinade. Cover and refrigerate for at least 4 hours, or overnight for best results.


2. Prepare the Coating:

In another bowl, mix together the flour, cornstarch, paprika, cayenne pepper, garlic powder, onion powder, salt, and pepper. The cornstarch helps achieve a super crispy coating, while the spices add depth of flavor.


3. Coat the Chicken:

Remove the chicken pieces from the marinade, letting the excess drip off. Dredge each piece in the flour mixture, pressing the flour onto the chicken to ensure an even coating. For extra crunch, you can double coat by dipping the chicken back into the marinade and then again into the flour mixture.


4. Fry the Chicken:

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully add the chicken pieces, frying in batches to avoid overcrowding. Fry each piece for about 12-15 minutes, or until the chicken is golden brown and the internal temperature reaches 165°F (74°C).


5. Drain and Serve:

Remove the chicken from the oil and place it on a wire rack to drain excess oil. Let it rest for a few minutes before serving.
