4 chicken thighs and 4 drumsticks (skin-on, bone-in)


1 cup buttermilk


1 tablespoon hot sauce (optional, for a little heat)


2 cups all-purpose flour


1 tablespoon cornstarch


1 teaspoon garlic powder


1 teaspoon onion powder


1 teaspoon paprika


1/2 teaspoon cayenne pepper (optional)


Salt and pepper to taste

Method


1. Marinate the Chicken:

In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces, making sure they are fully submerged in the buttermilk mixture. Cover and refrigerate for at least 2 hours or overnight. This marinating step helps tenderize the chicken and infuse it with flavor.


2. Prepare the Coating:

In another bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. The cornstarch helps make the coating extra crispy.


3. Coat the Chicken:

Remove the chicken from the buttermilk, letting the excess drip off. Dredge each piece in the flour mixture, pressing the flour onto the chicken to ensure an even coating. For extra crispiness, dip the coated chicken back into the buttermilk, then dredge again in the flour mixture.


4. Fry the Chicken:

Heat about 1 inch of vegetable oil in a large skillet or deep fryer over medium-high heat until it reaches 350°F (175°C). Fry the chicken in batches, making sure not to overcrowd the pan. Cook for 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through. The internal temperature should reach 165°F (74°C).


5. Drain and Serve:

Transfer the fried chicken to a wire rack set over a baking sheet to drain excess oil. This keeps the chicken crispy as it cools slightly. Serve hot with your favorite dipping sauces, and enjoy the crunch!
