Ingredients


For the Cake:


2 cups all-purpose flour


1 cup granulated sugar


1/2 cup unsalted butter, softened


1 cup sour cream


2 large eggs


1 teaspoon vanilla extract


1 teaspoon baking powder


1/2 teaspoon baking soda


1/4 teaspoon salt



For the Streusel Topping:


1/2 cup all-purpose flour


1/2 cup brown sugar


1/2 cup chopped pecans (optional)


1/4 cup unsalted butter, melted


1 teaspoon cinnamon

Method


1. Preheat and Prep:

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish or line it with parchment paper for easy removal.


2. Make the Streusel:

In a bowl, combine flour, brown sugar, chopped pecans (if using), melted butter, and cinnamon. Mix until crumbly and set aside.


3. Prepare the Cake Batter:

In a large bowl, beat together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.


4. Combine Dry Ingredients:

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, starting and ending with the flour mixture. Mix until just combined; do not overmix.


5. Assemble and Bake:

Pour the batter into the prepared baking dish and spread it evenly. Sprinkle the streusel topping over the batter. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.


6. Cool and Serve:

Let the cake cool in the pan for about 10 minutes before serving. Enjoy it warm or at room temperature.
