Ingredients:
1 ¾ cups all-purpose flour
2 cups granulated sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
½ cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
1 cup dark chocolate chips (optional)
Instructions:
1. Preheat and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper circles.
2. Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Mix until well combined.
3. Combine Wet Ingredients: In another bowl, whisk together the eggs, milk, oil, and vanilla extract. Gradually add the wet ingredients to the dry mixture, beating on medium speed until smooth.
4. Add Boiling Water: Slowly pour the boiling water into the batter, stirring constantly. The batter will be thin, but this is expected; it helps the cake stay moist and rich.
5. Add Chocolate Chips (Optional): Fold in dark chocolate chips for an extra chocolatey bite.
6. Bake: Divide the batter evenly between the prepared pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
7. Cool and Frost: Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely. Frost with your favorite chocolate frosting or enjoy as is.
