Ingredients
For the Chocolate Cake:
1 3/4 cups all-purpose flour
1 1/2 cups granulated sugar
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 large eggs
1 cup whole milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
For the Filling and Topping:
2 cups heavy whipping cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
2 cups pitted sour cherries or canned cherries, drained
1/4 cup Kirsch (cherry liqueur) or cherry syrup
Chocolate shavings or curls for decoration
Method
Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the eggs, milk, oil, and vanilla extract. Beat until smooth. Stir in the boiling water; the batter will be thin. Divide the batter evenly between the prepared pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
2. Prepare the Whipped Cream:
In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat.
3. Assemble the Cake:
Using a serrated knife, level the tops of the cooled cakes if necessary. Place one cake layer on a serving plate and brush with Kirsch or cherry syrup. Spread a generous layer of whipped cream over the cake, then add a layer of cherries. Place the second cake layer on top and repeat with more syrup, whipped cream, and cherries.
4. Decorate:
Frost the top and sides of the cake with the remaining whipped cream. Decorate with chocolate shavings or curls and top with a few cherries for a classic Black Forest look.
